BBQ Ribs

Ingredients :

Prep Time : 15 minutes
Cooking Time : 1.5 hrs
Makes 3 servings

Dry Rub

2 tablespoons of brown sugar
1 tablespoon of chili powder
½ tablespoon of paprika
2 teaspoons of salt
1 teaspoon ground pepper
1 teaspoon of dry mustard
1 teaspoon of onion powder
1 teaspoon of garlic powder
1 rack of pork baby back ribs

6 tbsp of ginger ale
tin foil

Barbecue sauce

2 teaspoon chili powder
2 tsp paprika
1 teaspoon onion powder
1 teaspoon garlic powder
4 tablespoons olive oil
1 ½ cup ketchup
1 ½ cup apple jelly
½ cup cider vinegar
2 tablespoons Dijon mustard
Salt and pepper to taste

Directions:

Dry Rub

  1. In a bowl, combine all the ingredients. Set aside.
  2. Remove the white membrane on the back of the ribs.
  3. Place the ribs on a baking sheet and sprinkle generously with the dry rub, rubbing the meat well on both sides.
  4. Preheat oven to 350 °F.
  5. Wrap the rack of ribs, in aluminum foil, adding 6 tbsp of ginger ale. Place on a baking sheet.
  6. Bake for 1.5 hours or until the meat is tender.

Barbecue sauce

  1. In a saucepan, fry the spices in the olive oil for 1 minute
  2. Add the remaining ingredients. Bring to a boil and simmer for about 5 minutes or until the sauce has consistency of syrup.
  3. Season with salt and pepper.

Final steps

  1. Set oven to Broil – High
  2. Unwrap the ribs and baste one side with sauce
  3. Place timer for 4 minutes
  4. Place ribs in oven. Once 4 minutes is over and sauce appears to be thickening on ribs, remove from oven and flip
  5. Baste other side of ribs and place in oven for another 4 minutes

** There will be plenty of BBQ sauce to pour over your rice or ribs
