Prep time: 20 minutes
Makes 2-3 servings
1 medium sized jicama
3 tbsp of fresh cilantro
1 ½ tbsp of lime juice
1 tbsp of orange juice
¼ tsp of salt
¼ tsp of pepper
2 small navel oranges or 3 clementines
- Slice the jicama finely, add to salad bowl.
- Chop the fresh cilantro into small pieces and add to the bowl.
- Separate the clementines, or cut up the oranges and add to the salad bowl.
- Add the orange juice and lime juice. Note: you can use lemon juice instead of lime juice if you prefer.
- Add the salt and pepper.
- Toss and serve cold.
** If you are preparing the salad for tomorrow’s lunch, I suggest only adding the juice tomorrow so it stays crunchy and does not get soggy.
