Jicama & Cilantro Salad

Prep time: 20 minutes
Makes 2-3 servings

Jicama and Cilantro


1 medium sized jicama
3 tbsp of fresh cilantro
1 ½ tbsp of lime juice
1 tbsp of orange juice
¼ tsp of salt
¼ tsp of pepper
2 small navel oranges or 3 clementines


  1. Slice the jicama finely, add to salad bowl.
  2. Chop the fresh cilantro into small pieces and add to the bowl.
  3. Separate the clementines, or cut up the oranges and add to the salad bowl.
  4. Add the orange juice and lime juice.                                                                              Note: you can use lemon juice instead of lime juice if you prefer.
  5. Add the salt and pepper.
  6. Toss and serve cold.

** If you are preparing the salad for tomorrow’s lunch, I suggest only adding the juice tomorrow so it stays crunchy and does not get soggy.
